In Central Nicaragua, the Jinotega region is the primary coffee producing region in the country and is home to some fascinating coffees that boast complex and fruit-like characteristics.
This particular microlot from producers Jairo and Fatima is a washed - Red Catuai varietal that has full, juicy body with a pucker of cranberry and strawberry jam. Jairo and Fatima put in the extra work to maintain full traceability of every variety of coffee grown; an impressive feat considering they are much more than coffee producers. They also oversee the production of broccoli, celery, potatoes, and carrots on their farm and have aspirations to build a new micromill and improve roads on their small farm.
