Coming from the Yirgacheffe growing region in Ethiopia, the cherries used for this coffee have their fruit removed through a natural process. After being picked, the cherries are laid on raised drying beds and constantly turned for the first 48 hours (day and night!) to ensure even evaporation and a clean cup.
The result from going through the natural process is a juicy and clean cup that has a fruit basket of flavors. We pick up a big blueberry jam note along with a delicate floral background.
