Honduras Microlot: Maria Josefa Ayala Farm DirectBorealis Coffee Company
This coffee was an origin trip selection from Brian's visit to Honduras in Spring 2017. After a week of tasting coffees and visiting multiple farms, the coffee from Finca El Eden stood out as a winner. The farm is managed by Maria Josefa Ayala, a warm and friendly woman. After a tour of her property, she invited the group into her home for fresh baked cookies and coffee.
We roast this coffee on the lighter side of medium to really capture the ideal profile for Maria's coffee: a sweet, milk chocolatey flavor that cools to bring forth notes of hazelnut and stone fruit. It has a nice creamy body that you can drink all day.
Finca El Eden is located in Copantillo, San Andres at an elevation of 5725 feet above sea level.
