To celebrate the holiday season, we're excited to introduce our newest single origin coffee from our friends at Finca Idealista in Matagalpa, Nicaragua. This coffee is a processed via Carbonic Maceration, a process borrowed from the wine industry. In coffee, it involves placing harvested coffee cherries in airtight barrels before pumping in CO2 to create a CO2-rich environment. The CO2 allows the cherries to break down different levels of pectins, often producing bright and winey coffees with strong notes of red fruits.
What does that mean? It means this coffee is going to blow your mind! We've spent extra time profiling this coffee to ensure that you'll be as excited as we are. Look for overwhelming strawberry and cherry notes, a hint of rum-raisin, and loads of complexity. We paid a premium for this coffee because it's really special and we're excited to share it with you and your coffee loving friends.
