Jhoner Delgado Torres owns a 3.5-hectare farm and grows coffee on 2.75 hectares of the land, under a cover of shade. While Jhoner does not hold an organic certificate for his farm, he is a member of the cooperative Lima Coffees since 2017, and is careful to use sustainable methods and materials in his farming. Coffee on Jhoner's farm is picked ripe and depulped the same or the following day, then fermented dry for 25 hours in open-air tanks before being washed three times. It takes 15–25 days to dry the coffee
